Homemade impressive-looking cheesy vegetarian tart recipe - Tested till perfect

Something that I made for office buddies! They just loved it...do try at home...easy to make and delicious to taste!
Add any vegetable you like even meat if you prefer.

Ingredients:

10 Mushrooms
3 medium sized Tomatoes
1 Onion
2 Green Chilli (Add chilli only if you want it to be spicy)
Fresh Parsley
Olive oil
Pastry Sheets
Mozzarella & Cheddar Cheese
Little butter

Method:

Dice the Onion, Tomatoes, Chilli (Add chilli only if you want it to be spicy) and the Mushrooms.

Saute the Onion and the chilli using olive oil for about 10 minutes.
Now add the tomatoes and saute for 15 minutes and Salt and pepper to taste.

Now add the Mushrooms and cook till the liquid evaporates. Once cooked add the fresh cut parsley.
Melt the butter, take out the filo pastry and place one sheet on a chopping board. The rest should be kept covered with clingfilm until needed. Brush the filo with butter, then cut it into squares, approximately 6cm, using a knife. Press two squares of pastry into each  hole, filling all 12 cases.
Now take a cupcake tray and lay the pastry sheet to each pocket. Now, fill east pocket with the curry.

Now, cover the tart top with the two kinds of cheese. Brush the pastry sheet edges with butter to make it crisp.

Preheat the oven to 350 degrees and bake for 20-25 minutes.
Now remove from oven and remove once it cools down a little.
