Making Chocolate cupcake with Coffee cream icing with my little hero Aaron!


 
Preheat the oven to 350 degrees F. Line muffin pans with paper liners and set aside.
 Add 1 cup of oil
 Add 2 cups of sugar
 Add 3 Eggs and mix well
 Add 1 1/2 teaspoons baking soda, 1 teaspoon baking powder & 1/2 teaspoon salt and mix well
 Add 3/4 cup unsweetened cocoa powder
 Mix well
 Add 1 (8-ounce) container sour cream and mix well.
 Add 2 1/4 cups all-purpose flour. Little at a time nad mix well. Then add 1 tsp of Vanilla and mix well.
 Spoon the batter evenly into prepared muffin cups, filling each 2/3 full. Bake until a tester inserted in center comes out clean, for 16 to 18 minutes.
 Melt the chocolate with 5 tablespoons of milk on a boiling water bath.
 Let them cool in pans on wire racks for 5 minutes. Remove from the pans and cool completely on wire racks.

 Make a whole in the center
Add 1 tsp of the chocolate mixture to the venter.

 Add the Coffee Butter cream on top!
