Grilled Vegetable Paninis - Just 25 min to make and mouthwatering


Ingredients:

1/2 cup Mayonnaise - I usually use Hellmann's Olive oil Mayonnaise
1 tsp Finely minced garlic
Olive oil
2 small zucchini, cut lengthwise into 1/4th inch slices
1 red bell pepper, cut into 1/2 inch strips
1 small Japanese eggplant, cut lengthwise into 1/4-inch slices
8 thick sliced of Italian bread
1 jar marinated artichoke hearts, drained and chopped (You can make them at home too)
8 slices mozzarella cheese
Salt & Pepper

Method

Combine Mayonnaise and garlic; set aside.
Coat vegetables with olive oil, pinch of salt and pepper (If you prefer) .
Heat an electrical grill pan until hot. Working in batches, grill vegetables in a single layer for 3 to 5 min until tender. Set aside. (If you do not have a grill just use a pan on fire)
Spread Mayonnaise mixture on one side of bread slices. Layer the Artichokes and vegetables on the other 4 slices.
Top each slice with the vegetables with 2 slices of the cheese.
Cover with the the bread slices with Mayonnaise side facing down.
Grill sandwich for 3 min or just until cheese melts ( If u don't have a grill use a pan on heat and place a heavy metal on top of the sandwich so that it gets pressed down. Do that for both sides. Till both sides get crunchy)
Cut in halves to serve.

Note:
You could add carrot/ spinach/ Onion if preferred and to make it more nutritious.
