Mouthwatering Chicken Strips specially for kids...something that I make for my little one!


Something that is easy to make. Feel free to get your kids involved. Trust me they would enjoy helping you :) I make this often with my little angel!

Ingredients:

Butter/ shortening
4 medium skinless boneless chicken breast halves (About 1 1/4 pounds)
Salt to taste (If required)
1 cup bite-size cheese crackers (regular for kids and reduced fat for adults :) )
1/4 cup fine dry bread crumbs
1/2 cup buttermilk or milk

Method:

Turn on oven to 400 degrees (If you want to deep fry then use a large pan with oil). Grease the baking pan with shortening/ butter.
Cut each Chicken breast half into 6 strips and rub bit of salt if preferred.
Put the crackers in a plastic bag. seal or tie the bag and use the rolling pin to crush the crackers.
Pour the crushed crackers into a plate and add the bread crumbs. Mix them well with a spoon.
Pour buttermilk into a medium bowl.
Dip each piece of chicken into the buttermilk, turning to coat completely.
Roll each chicken piece in crumb mixture. Press crumbs onto chicken pieces so that they stick.
Place coated chicken piece on the prepared baking pan.
Put the pan in the oven. Bake foe 15-20 minutes. until no pink colour is left in the center of the chicken and the crumb mixture is golden brown ( If your deep frying in oil fry then in 350 degrees till it turns golden brown)

Honey mustard dip (If preferred)

In a small bowl put 1/2 cup mayonnaise (Low fat mayonnaise for adults :) ), 4 tsp mustard, 1 tablespoon honey.
Stir well with a spoon.
