My Mother's Soya Curry - Tested till perfect


Ingredients:

2 cups of Soya (TVP)
3 cloves of garlic
1 inch piece of ginger
1 tbsp vegetable oil
1 onion, sliced
2 green chillies chopped
1 cup of tomatoes, chopped
4 tsp curry powder (Chillie powder+ spices) - You could add more if desired.
1 sprig curry leaves (optional)
Salt to taste
Tomato Sauce
Soya Sauce

Ground cinnamon and cardamom

Method:

Soak the Soya in hot water for about 30 minutes and squeeze to remove the water out.
Cut the Soya into small pieces and in a bowl mix the Soya meat with the Curry powder, & salt  keep it aside.
Grind the garlic and ginger to a paste (If you don't desire the taste of Ginger you need not add it)
Heat the oil in a pan under medium heat. Add ginger, garlic paste. Fry till fragrant.
Then add the Onion & Chillies & the curry leaf and fry till golden brown. You could add salt along with it to remove the moisture.
Now add the Chopped Tomatoes and fry in low heat till it becomes a paste and the raw smell goes off.
Next add the mixture in the bowl to the pan . Add 1/2 - 1 cup of water and mix well.

Cook covered for about 15 - 20 minutes or so until the desired consistency is achieved.
Then add a bit of tomato sauce and Soya sauce and mix well.
Add some roasted and ground cinnamon and cardamom at the end and remove from heat.

* If desired, you can add about 1/4 cups of coconut milk about 5 minutes before taking off the heat.

  1. hey shiva what is black curry powder...do u get it in india...what can i substitute it with..

  2. Don't worry Lavanya...use Curry powder (Chilli powder + Spices) that would be enough :) and also make sure you cut the soya into small pieces then it would taste better and also add some roasted and ground cinnamon and cardamom at the end when u removing the curry from flame.
